| • | Preheat oven to 300 degree F and line the baking tray with parchment paper.

| • | In a food processor, grind the almonds and then add the sugar; grind again for 15 seconds.

| • | Finally, add egg whites and almond extract, carry on to grind until a smooth dough forms about the blade.

| • | Take aside the dough and cut down aside cookies from it. Place the cookies onto cooked baking sheets.

| • | Bake in preheated oven for 20 to 30 minutes until they turn golden.

| • | Allow cookies to cool completely on the paper before removing.

| • | Amaretti is ready to serve. Store in a dry aside place.
