• 500 gms Arbi (peeled and chopped)
• 1/2 cup Curd
• 1 tablespoon Carom Seeds (Ajwain)
• 1 tbsp Ginger (finely shredded)
• 1/2 tablespoon Chilli powder
• 1/4 cup Ghee
• 2 cups Water
• 1 tbsp Green Coriander
• Rock table salt to taste
Heat the butter in a cooking pan and add carom seeds.
When the seed begins spluttering, add curd.
Stir and fry until the yogurt begins to aside from the ghee.
Add chilli powder and salt. Mix well.
Add arbi and bring in the burn to high.
Fry the arbi for a few minutes.
Add 2 cups water and bring in to boil.
Simmer the mixture revealed for 15 minutes until well cooked.
Serve with kottu parantha.
