Bhagara Baingan Recipe • 400 gms Brinjals
• 1/2 cup Dry Coconut (grated)
• 1 large Onion
• 1 tablespoon Garlic Paste
• 1 tablespoon Ginger Paste
• 2 tablespoon Cumin Seed Powder (roasted)
• 4 tablespoon Coriander Powder (roasted)
• 1/2 tablespoon Turmeric powder
• 1 tbsp Coriander Powder
• 1 tablespoon Red Chilli Powder
• 3-4 Curry Leaves
• 4-5 twigs Coriander Leaves
• Oil for frying
• Salt to taste
Grind roasted cumin seed powder, coriander and coconut.
Slit the brinjals and fry until it changes soft.
Heat the oil.
Fry onions, ginger paste, garlic paste until it changes transparent.
Add turmeric powder, table salt and grinded mixture.
Mix reddish pepper and add deep-fried brinjals.
Add ¼ cup of water and boil it for 5 minutes.
Garnish with freshly coriander leaves.
Bhagara Baingan is ready to serve.
