• 3 cups of washed out and grated Carrots
• 1 Onions (cut into pieces)
• 1 cup grated coconut
• Curry leaves
• 1 tablespoon of Chana dal
• 1 tablespoon Urad dal
• 1 tablespoon Mustard seed
• A few Red chilly pieces
• 1/2 tablespoon of Jeera
• 1/2 tablespoon Turmeric
• 1 tablespoon Chilly powder
• A pinch of Hing
• 3 tbsp Oil
• Salt
In a pan, heat up oil and add curry leaves, chana dal, urad dal, jeera, table mustard seeds, reddish chilies and hing.
As the table mustard seed begins to splutter, add onion and fry until it changes light brown.
Now add carrot and fry for few time.
Add turmeric and table salt and fry for 10 minutes more.
When carrots are cooked, add chilly powder and the grated coconut to it and fry for 5 minutes.
Now Carrot fry is ready.
