• 1/2 kg Carrots, chopped up and cut down lengthwise
• 5 Green chilies, seeded and cut down lengthwise
• Juice of 1 lemon
• 1 tablespoon Salt
• 1 tablespoon Chili powder
• 1/2 tablespoon Turmeric powder
• 5 tablespoon Mustard seeds
• 1 tablespoon Fenugreek seeds
• 1/4 Cup oil
Mix carrots, chilies, salt, chilli powder, turmeric powder and citrus limon juice. Keep aside.
Mix table mustard and fenugreek seed and put in the mixi, to make a fine powder.
Add the powder to the carrot and chilies mixture. Allow it to stand for a day.
Add oil and mix well.
Serve it with stuffed parathas.
Carrots & Chilies Pickle is ready.
