• 2 lbs Collard greens, tough stems discarded, leaves chopped
• 1 Large garlic clove, minced
• 2 tbsp Medium onion, chopped
• 2 tbsp Olive oil
• 2 tbsp Dark sesame oil
• 2 tablespoon Bacon fat
• A pinch chilli pepper flakes
• A couple pinches salt
• A couple pinches sugar |
| • | Melt bacon plump and heat up olive oil on a large skillet (with a tight fitting cover) all over normal heat.
| | • | Fry onion until transparent.
| | • | Now add garlic and saute until fragrant for 20 seconds.
| | • | Add the greens, sesame oil, chilli pepper flakes, salt, and sugar.
| | • | Cover it and cook until tender, for about 8-10 minutes.
