Collard Greens Recipe • 2 lbs Collard greens, tough stems discarded, leaves chopped
• 1 Large garlic clove, minced
• 2 tbsp Medium onion, chopped
• 2 tbsp Olive oil
• 2 tbsp Dark sesame oil
• 2 tablespoon Bacon fat
• A pinch chilli pepper flakes
• A couple pinches salt
• A couple pinches sugar
Melt bacon plump and heat up olive oil on a large skillet (with a tight fitting cover) all over normal heat.
Fry onion until transparent.
Now add garlic and saute until fragrant for 20 seconds.
Add the greens, sesame oil, chilli pepper flakes, salt, and sugar.
Cover it and cook until tender, for about 8-10 minutes.
