• 2.2 kg Fresh Figs
• 3/4 cup Water
• 7 cups Sugar
• 1/4 cup Lemon Juice
• 1 little package Pectin
First wash out the figs below running water. Then cut down off the stems and the bottom of the figs.
Heat water into a pot and bring in it to a boil.
Pour the boiling water all over figs and leave only it for 10 minutes.
Drain the water and chop the figs.
Now mix a little pectin with about 1/4 cup of sugar.
Take a pot and add 3/4 cup water, sugar, remain of the pectin and figs. Heat it to boil, stir on occasion until sugar dissolves.
Cook rapidly until thick. Stir often to avoid sticking.
Add citrus limon juice and the earlier-made pectin-sugar mixture into the fig mixture and cook 1 minute longer.
Pour the mixture into Ball Jars. Allow it to cool and then put it in the refrigerator.
