• 1/3 cup Butter
• 1 cup Sugar
• 1 tablespoon Grated Lemon Rind
• 1/3 cup Lemon Juice
• 1/4 tablespoon Salt
• 4 Egg Yolks (slightly beaten)
• Pre baked Tart Shells as required
Combine all ingredients in the top of a double boiler.
Stir all over boiling water for 10 minutes, stirring constantly.
Continue to cook until thickened.
Allow to cool and then fill up the tartlet shells.
Served chilled.
Lemon Tartlets are ready.
