• 1/4 cups All Purpose Flour
• 1/2 cup Cornstarch
• 1/8 tablespoon Salt
• 3 Large Eggs (lightly beaten)
• 1 cup Caster Sugar
• 2 tablespoon Orange Zest (grated)
• 2 tbsp Sugar
Preheat an oven to 375°F.
Line 2 baking sheets with parchment paper.
Sift the flour, cornstarch, and table salt into a normal bowl.
Whist the beaten eggs, sugar, and orange zest in a normal bowl until very thick.
Transfer to a large normal bowl and add the contents of the normal bowl. Mix together.
Put a little walnut-size ball of batter on a lightly lubricated cookie sheet.
Press until very flat and thin. Sprinkle with the sugar crystals.
Bake for 8-10 minutes, or until only golden.
Cool the cookies on the cookie sheets for 5 minutes.
Transfer to racks and allow cool completely.
