| • | Defrost the prawns or strip them if they are fresh.

| • | Add enough tomato puree to the mayonnaise to colour it deep pink.

| • | Add the prawns into this mixture and season them with a little freshly ground black pepper.

| • | Wash and shred the lettuce and split it between 4 attractive dishes.
|
| • | Spoon the prawn and mayonnaise mixture evenly onto the lettuce.
|
| • | Drop a little chopped up parsley and a small pinch of cayenne pepper onto each dish.
|
| • | Take 4 pieces of citrus limon and cut down one-half way crosswise the diameter of each. Twist one cut down one-half backwards and one forwards.

| • | Place one citrus limon twist around on top of each prawn cocktail and serve.
