| • | Peel the white potatoes and place them in the salted water and bring in it to a boil until well finished or easily pierced with a fork.

| • | Sprinkle it with the pepper and salt.

| • | In the blender normal bowl of the food processor puree the white potatoes and garlic until well mixed, for about 30 to 45 seconds.

| • | Still puréeing, gradually add the olive oil and vinegar, disjunctive between them until the mixture is soft.

| • | It should be creamy and thick and if it acquires also thick, add a little ice-cold water to it.
