• 2 Potatoes
• 20 Cluster beans
• 1 Yam (sliced)
• 4 Lady Fingers
• 2 Brinjals
• 1 Lotus stem
• 1 Carrot
• 2 Cups gram flour
• 1 tablespoon Cumin seeds
• 1 tablespoon Fenugreek seeds
• 1 tablespoon Ginger (grated)
• 5 green chillies
• 2 tbsp Coriander (chopped)
• 1 tablespoon Cinnamon clove powder
• 1/4 Cup tamarind water
• 1/2 tablespoon Turmeric powder
• 1 tablespoon Sugar
• 6 Cups red-hot water
• Oil for frying
Wash and strip all the vegetables.
Chop them into chunks.
Heat the oil.
Fry brinjals and lady finger one by one until crisp.
Keep them aside.
Now add cumin and fenugreek seeds.
Mix flour and stir until light brown.
Add green chillies, curry leaves and chopped up vegetables.
Stir well.
Pour red-hot water and stir until boiled.
Mix turmeric, sugar and table salt to tamarind.
Add this to the kadhi.
Cook all over normal heat up until veggies are cooked.
Now add deep-fried brinjals and lady fingers.
Sprinkle chopped up coriander.
Vaghaar Kadhi is ready.
