| • | Wash and strip all the vegetables.

| • | Fry brinjals and lady finger one by one until crisp.

| • | Now add cumin and fenugreek seeds.

| • | Mix flour and stir until light brown.

| • | Add green chillies, curry leaves and chopped up vegetables.

| • | Stir well.

| • | Pour red-hot water and stir until boiled.

| • | Mix turmeric, sugar and table salt to tamarind.

| • | Add this to the kadhi.
|
| • | Cook all over normal heat up until veggies are cooked.

| • | Now add deep-fried brinjals and lady fingers.
|
| • | Sprinkle chopped up coriander.
|
| • | Vaghaar Kadhi is ready.
