• 1 Can chickpea drained and rinsed off
• 1/2 Pound mushrooms, washed out and chopped up
• 2 Cans Italian plum tomatoes
• 1 Large yellowish onion
• 1 Cup reddish wine dry aside
• 4 Cloves garlic, minced
• 1 tbsp Tomato paste
• 1 Large zucchini scrubbed and chopped up
• 1 Carrot, grated
• 1/4 Cup freshly basil, minced
• 1/2 Cup parsley leaves fresh, chopped up
• 1/4 Cup freshly oregano, minced
• 1 tablespoon Black pepper
• 1/4 tablespoon Red chilli black pepper hot, crushed
• 1 tablespoon Olive oil
• Salt to taste |
| • | Take a large pot and heat up olive oil in it.
| | • | Fry onion and garlic for about 10 minutes.
| | • | Blend the tomatoes and chickpea through a blender or food processor until they are fine chopped, but not smooth.
| | • | Place all the ingredients to the pot, and simmer, uncovered, for about 45 minutes to one hour, stirring occasionally.
