Vegetable Pasta Sauce Recipe • 1 Can chickpea drained and rinsed off
• 1/2 Pound mushrooms, washed out and chopped up
• 2 Cans Italian plum tomatoes
• 1 Large yellowish onion
• 1 Cup reddish wine dry aside
• 4 Cloves garlic, minced
• 1 tbsp Tomato paste
• 1 Large zucchini scrubbed and chopped up
• 1 Carrot, grated
• 1/4 Cup freshly basil, minced
• 1/2 Cup parsley leaves fresh, chopped up
• 1/4 Cup freshly oregano, minced
• 1 tablespoon Black pepper
• 1/4 tablespoon Red chilli black pepper hot, crushed
• 1 tablespoon Olive oil
• Salt to taste
Take a large pot and heat up olive oil in it.
Fry onion and garlic for about 10 minutes.
Blend the tomatoes and chickpea through a blender or food processor until they are fine chopped, but not smooth.
Place all the ingredients to the pot, and simmer, uncovered, for about 45 minutes to one hour, stirring occasionally.
